A fast-growing, heirloom variety with a greenish-white, globe-shaped, swollen stem that develops just above the soil line. It produces short tops with few leaves and has crisp, white flesh with a nutty flavor when raw, and a mild cabbage-like taste when cooked. The plant is best harvested when the stem reaches about  cm (2–3 inches) in diameter and is a cool-season crop that needs consistent watering.
